This creamy chicken stroganoff recipe delivers rich flavour with tender chicken and sour cream sauce. Quick, comforting and perfect for dinner.

Ingredients

For The Stroganoff:

  • 2 Tbsp Olive Oil
  • 4 Skinless Chicken Breasts, Cut Into Chunks
  • 2 Onions, Finely Chopped
  • 4 Garlic Cloves, Crushed
  • 1 Tbsp Sweet Paprika
  • 400ml Chicken Stock
  • 4 Tsp Dijon Mustard
  • 2 Tbsp Worcestershire Sauce
  • 200g Soured Cream (Or Crème Fraîche)
  • A Large Handful Of Parsley, Chopped

To Serve:

  • Rice, Mash Or Pasta

Instructions

    1. Brown The Chicken: Heat half the oil in a frying pan over medium-high heat. Add chicken pieces, season, and cook until golden brown. Remove and set aside.
    2. Cook Aromatics: In the same pan, heat the remaining oil. Add onions, frying for about 6-8 minutes until softened (but not browned). Add garlic and paprika, cook another minute until fragrant.
    3. Build The Sauce: Pour in the chicken stock, add Dijon mustard and Worcestershire sauce. Return chicken (with any juices) to the pan. Simmer for 5-6 minutes until sauce is reduced slightly and chicken cooked through.
    4. Add Cream: Reduce heat to low. Stir in the soured cream (or crème fraîche) until the sauce is just simmering. Do not boil.
    5. Finish & Garnish: Stir through chopped parsley. Serve over your choice of rice, mashed potato, or pasta.

  • Lighter Version: Use half-fat or low-fat soured cream to reduce calories and fat.
  • Chicken Thigh Option: You can swap chicken breasts for chicken thigh fillets for juicier texture—they may need slightly longer cooking.
