  • 12 Egg Whites
  • 600g Cottage Cheese
  • 200g Oats
  • Salt And Pepper, To Taste

  • 250g Hot Smoked Salmon Fillets
  • 8 Tbsp Crème Fraîche
  • 2 Tbsp Chopped Chives
  • 1–2 Squeezes Of Lemon Juice
  • 4 Tsp Sunflower Oil (For Cooking)

Instructions

  1. Prepare The Pancake Batter: Mix egg whites, cottage cheese, and oats in a bowl. Season with salt and pepper. Let the mixture rest so the oats absorb moisture.
  2. Prepare The Salmon: Peel the skin from the smoked salmon and separate into chunks.
  3. Make The Chive Crème Fraîche: Combine crème fraîche, chopped chives, and lemon juice. Season to taste.
  4. Cook The Pancakes: Heat sunflower oil in a non-stick pan. Pour approximately 60ml of batter per pancake. Cook 2 minutes per side until golden brown. Keep warm while cooking remaining pancakes.
  5. Assemble The Dish: Place two pancakes on each plate. Top with smoked salmon chunks and drizzle with chive crème fraîche.
  6. Serve Immediately.
